Easy Granola
Granola is one of those foods that is very easy to make at home. This recipie can be just a starting point, you can decide how much nuts or seeds to put in, which dry fruit to use and also how sweet would you like it to be. I have to admit I have really sweet tooth but found that shop bought granola was just too sweet for me first thing in the morning. Few years back I started to experiment with different ingredients, changing proportions and I eventually come up with this recipie which is just right for Adrian and I. We would have it for breakfast but also as quick evening desert with lemon yoghurt and fresh berries.
INGREDIENTS
500g jumbo porridge oats
150g almond flakes
125g coconut
220g sunflower and pumpkin seeds
200g chopped cashew nuts
100ml vegetable or sunflower oil
150ml agave nectar or runny honey
150g dried fruit, I use a mix of currents, cranberries, raisins and sultanas
METHOD
Preheat the oven to 150C/fan 130/gas 2. Mix oats, almond flakes, coconut, seeds, oil and agave nectar or honey in a large bowl until combined well. Tilt the pale mixture to a large roasting tray and put in tho the oven. Take it out of the oven every 15min and gently toss about so all ingredients toast evenly, you will prevent that way burning the granola.
Once baked and cooled mix the dry fruit in. Transfer to an air tide container and keep for up to 4 weeks.
